My back story.
Changing my diet after I was diagnosed with Hashimoto’s autoimmune thyroiditis meant I had to find a lot of different substitutes to make foods my whole family could enjoy as I started my healing process.
It was definitely challenging giving up so many foods, (like grains) but it was so worth it, as I am now in remission from my autoimmune disease.
It is hard when at least one family member has a diet restriction or food allergy and you end up having to make two different meals for everyone.
I found a solution to this by finding great substitutes (some of which are better than the real thing!) One of my absolute favorite substitutes is cassava flour.
You may have heard about this hidden gem as it is gaining popularity among the paleo community.
For those of you who do not know, cassava is a tuberous root that is starchy. Sometimes it is called Yuca.
This cassava flour is somewhere in between starchy flours such as arrowroot and tapioca and real wheat flour. Cassava flour creates a category all of its own.
One of my absolute must have flours that I always have on hand is Otto’s Naturals Cassava flour.
Why do l use Otto’s Naturals Cassava flour?
It is non-GMO project verified, certified paleo, and grain free. It does not add a strong flavor unlike other cassava flours out there on the market. This is because of how Otto’s processes the cassava from root to flour.
Typically cassava roots are peeled and left to ferment in the sun. Fermentation is good for many things, but anyone who is familiar with the fermentation process knows that whatever is fermenting gets a sour taste to it.

I make grain-free pasta with the cassava flour. From linguini and spaghetti to sausage and mushroom stuffed ravioli.

My best cassava flour pancake recipe.
Below is my highly prized cassava flour pancake recipe for you to try when you get your cassava flour.
In a blender or food processor mix:
½ C sunflower seed flour (any nut flour like almond would work)
2 Tbs grain free baking powder
½ Tsp salt
1 very ripe banana
2 organic pastured eggs
2 Tbs coconut oil (avocado oil or olive oil will work)
¾ C coconut milk (flax milk, almond milk, or hemp seed milk will work)
¼ C water
1 Tsp vanilla
If it is too thick for your liking add more milk, if too thin add more cassava flour 1 Tbs at a time.
Cook in a seasoned cast iron pan.
This grain-free pancake recipe is delicious and has a nutty flavor to it. Anyone I make it for absolutely loves it. Some even opt for a plate without maple syrup because of the natural sweetness of the banana.
