My back story.
Changing my diet after I was diagnosed with Hashimoto’s autoimmune thyroiditis meant I had to find a lot of different substitutes to make foods my whole family could enjoy as I started my healing process.
It was definitely challenging giving up so many foods, (like grains) but it was so worth it, as I am now in remission from my autoimmune disease.
It is hard when at least one family member has a diet restriction or food allergy and you end up having to make two different meals for everyone.
I found a solution to this by finding great substitutes (some of which are better than the real thing!) One of my absolute favorite substitutes is cassava flour.
You may have heard about this hidden gem as it is gaining popularity among the paleo community.
For those of you who do not know, cassava is a tuberous root that is starchy. Sometimes it is called Yuca.
This cassava flour is somewhere in between starchy flours such as arrowroot and tapioca and real wheat flour. Cassava flour creates a category all of its own.
One of my absolute must have flours that I always have on hand is Otto’s Naturals Cassava flour.
Why do l use Otto’s Naturals Cassava flour?
It is non-GMO project verified, certified paleo, and grain free. It does not add a strong flavor unlike other cassava flours out there on the market. This is because of how Otto’s processes the cassava from root to flour.
Typically cassava roots are peeled and left to ferment in the sun. Fermentation is good for many things, but anyone who is familiar with the fermentation process knows that whatever is fermenting gets a sour taste to it.
Luckily, Otto’s Cassava flour is dried and ground without fermenting. They grind the cassava into an extremely smooth flour, which is also not the case for every brand that’s out there.
I use Otto’s Cassava flour for so many things.
The tortillas I make using only cassava flour taste better than any gluten free tortilla I have ever tried, being grain free is just a plus. The tortillas come out soft and moldable without cracking like most gluten free versions.
I make a loaf of bread, no yeast needed, from the cassava flour that my children absolutely love. I actually use Otto’s Naturals recipe for sandwich bread, but they have so many other recipes available on their website too.
I literally have to hide it and ration it out or my husband and daughters would eat it all in a day or two. It’s light and airy, no need to toast it like most gluten free store bought bread.
Grain free flours have changed my life in many ways, surprisingly it has been an upgrade in taste since using cassava.
Otto’s cassava flour is the best and so versatile.
I use it in grain free cakes, pie crusts, homemade fruit tarts, pancakes, waffle cones for ice cream, and a whole lot more.
Once in a while, I drudge turkey breast in the cassava flour to make coconut oil fried turkey tenders.
I use it to make multiple batches of grain free graham crackers every single week.
I make grain-free pasta with the cassava flour. From linguini and spaghetti to sausage and mushroom stuffed ravioli.
I have attempted this with many gluten free flour mixes and it never worked out as well as this cassava flour does. It will work with any pasta you are trying to make, I have a macaroni KitchenAid attachment on my Christmas list!
Just last night, I made a pizza crust with it, needless to say, it passed the husband taste test.
I use Otto’s Naturals cassava flour every single day.
This cassava flour has become a staple in our house and I recommend it to anyone who is thinking of grain free baking or even gluten free.
This cassava flour has been a game changer in our household. I actually buy the biggest bag they have (20 pounds) every other month. (That’s how much I use this flour!)
You don’t have to go that crazy until you try it out and fall in love with it like me. They have three different sizes available: 2 pounds, 5 pounds or 20 pounds. Shipping is usually fast and free.
I would never write a review for a product I don’t stand behind and use myself. So if you are searching for the best cassava flour, look no further.
It also makes me feel better when my youngest is on her second or third grain free no’meal raisin cookie for the day, I just tell myself it’s mostly vegetable! Those starches are good for her gut!

My best cassava flour pancake recipe.
Below is my highly prized cassava flour pancake recipe for you to try when you get your cassava flour.
In a blender or food processor mix:
½ Cup Otto’s Naturals Cassava Flour
½ Cup Almond flour (any nut or seed flour should work)
2 Tbs grain free baking powder
½ Tsp salt
1/4 Cup very ripe mashed banana
2 organic pastured eggs (Sub 2 Tbsp of chia seeds for egg free and omit the banana)
2 Tbs coconut oil (avocado oil or olive oil will work)
1 Cup coconut milk (flax milk, almond milk, or hemp seed milk will work)
1 Tsp vanilla
If it is too thick for your liking add more milk, if too thin add more cassava flour 1 Tbs at a time.
Cook in a seasoned cast iron pan.
This grain-free pancake recipe is delicious and has a nutty flavor to it. Anyone I make it for absolutely loves it. Some even opt for a plate without maple syrup because of the natural sweetness of the banana.
